Do you have busy day ahead of you, but don't want to forget about dinner? So, you choose to make something in the crockpot, but are tired of the same old meal ideas? Well! I am here to give you fresh idea! Corned Beef Reuben Sandwiches!
You Will Need:
1-Corned Beef Brisket
1- jar of sauerkraut
Beef stock or Beef stock concentrate
1,000 Island Dressing
1-block of Swiss Gruyere cheese.
1- Loaf of Pumpernickel Rye Bread
Instructions
Add your brisket in a crockpot, you can either add half of the liquid beef stock in the pot and dilute it with water, just enough to cover most of the meat, OR, you can mix the beef concentrate with 4-5 cups of water and pour it in the pot. Add the seasoning packet that is provided with the brisket. *Adding the water will help the meat from drying out*
Put the lid on the pot and set the time on low for 10 hours.
Once meat is finished, take it out of the pot, and shred and the set aside. *The meat should be nice and tender.*
Prepare the other ingredients. Warm up the sauerkraut in a frying pan ( this pan can be used to toast the sandwiches). Shred the cheese, and butter the bread.
Assemble the sandwiches! Put one piece of bread butter side down, drizzle on some dressing, add how ever much meat is desired, add the sauerkraut, sprinkle the cheese and finish with drizzling some more dressing on top. Add second piece of bread.
Toast until bread is crisp and cheese is melted. Serve with french fries or potatoe salad.
